If you’re looking for a dessert that is keto-friendly, sugar-free, and/or vegan . . . oh, and dare I say, chocolate, then yeah, I’ve got a recipe for you! If you’ve never thought you’d want or you’ve never had avocado pudding you’re probably thinking, “Yuck!” but hey, hear me out. It’s actually amazing! Seriously, I just could not believe how much I loved chocolate avocado pudding until after I had it! This recipe is easy, effortless, and so good for you!
The first time I heard about avocado pudding, I was completely grossed out at the thought of it. How on earth could you take something that belongs in guacamole and make it taste like dessert?! Yuck! But since I had recently become vegan, I was dying for a dessert that had more complexity than an apple, orange, or some other piece of fruit. It was time to branch out beyond salad and quinoa and expand my horizons. Damn, this recipe did just that!
This particular recipe is not only vegan, but it also’s keto-friendly, and sugar-free so it’s great for diabetics or those on a low-calorie diet. Of course, you can modify the recipe however you like. For example, instead of monk fruit sugar (which is sugar-free), you could use honey or even maple syrup. You can also modify it to have the fruit of your choice or no fruit at all and just have it as pudding. So many options!
Health Benefits of Avocados
There are so many benefits to avocados. First and foremost, they are high in monosaturated fats which is great for lowering your cholesterol and keeping your heart healthy! They are also high in potassium which decreases blood pressure. They are high in fiber which is good for so many reasons, including my very favorite: decreasing those dreaded hunger pangs. And they are high in folate which increases brain function and of course, decreases brain fog. Now that you are sold on the benefits of avocados, let’s get to the recipe.
I’m not vegan anymore but do eat about 90% plant-based. While it had been a minute since I made this, I had a hankering recently and all I can say is “Wow, what took me so long?” It is utterly amazing that this tastes so good! And it’s so freakin easy to make too – it literally takes like three minutes to whip up.
Ingredient List
The following recipe will make about 1 cup of pudding or 1 serving.
Recipe
- 2 Ripe Avocados
- 2 Tablespoons Cocao or Cocoa (it doesn’t really matter) powder
- 2 Tablespoons Monk Fruit Sugar
- 1/4 Cup Almond Milk
Optional:
- 1/2 tsp Vanilla extract
- 1 scoop Whipped topping
- Berries of your choice (I like either blueberries or strawberries)
Notes:
I like Monk fruit sugar because it measures just like regular sugar yet has zero calories. It doesn’t have the aftertaste of many sugar substitutes. But it is difficult to find where I live so I have it on auto-order through Amazon.
You can find my favorite Monk fruit sugar as well as all my other favorite health and wellness supplies (food and otherwise) on My Amazon Storefront.
